Cut the carrot and bell pepper into small pieces.
Cut the chicken breast into pieces.
Heat the oil in a pot and fry the chopped onion and garlic. Add the pieces of chicken breast and fry till golden brown.
Add the carrot and pepper pieces and the peas. Season with pepper, ginger, scotch bonnet pepper, chopped parsley and MAGGI Chicken tablets. Moisten with water and cook covered until the chicken is cooked. Add the rice and let it cook.
