Peel and wash three tubers of sweet potatoes and grate.
Clean carrot and grate as well.
Roughly chop one yellow onion and set aside.
In two bowls, separate two eggs whites from the yolk and whisk the egg whites till fluffy and form stiff peaks.
In a large mixing bowl, add the sweet potatoes, carrots, onion, cabbage, cauliflower, garlic, two egg yolks and MAGGI SEASONING CUBE and mix well
Mix flour and nutmeg and add to the mixture. Gently fold in egg whites into the mixture
Heat frying pan with olive oil and fry mixture on medium to low heat till both sides are golden brown.
